{jicama & roasted potato salad}

jicama & roasted potato salad.

it is really SO much fun to watch his faces as he hears things. he is still really overwhelmed - we had expected that. & is a lot sleepier that usual, so it will just take some time for him to get used to everything. i don't even know where to start with him. i've taken him on a home tour & talk about all of the noises he is hearing. we'll be doing that a lot, i think.

so otherlywise, this is an old family favorite recipe, if you can even call it that.
it always reminds me of summertime.

its one of those foods that we forget about for awhile, & then make several times a week once it's been thought of again.

its very delicious.

jicama {pronounced hee-ke-mah} is a sweet, crunchy root veggie. a bit potato-like in texture, but you can totally eat it raw & it is delicious. & another weird fact: you can peel them by hand if you really want to. i did it. its kind of fun.

to make this yummy salad you will need:

a bundle of spinach
4 small red potatoes. chopped.
1/2 a jicama. cut into bit sized pieces
your choice of spices for the potatoes
oil

wash & dry spinach. toss potatoes in 1 1/2 tbs of oil {i use coconut. always a fav}, 1 tsp turmeric, 1/2 tsp cumin & salt & pepper. bake in oven at 400 degrees. turn potatoes every 5 minutes until crispy. i don't have an exact time for this. maybe 10 minutes? i'm not an incredibly precise cook.

& that is seriously your salad. it seems very simple, but its enough.

we have also added:
snow peas
sautéed red onion
diced granny smith apple

& the most fabulous dressing recipe for this is coming tomorrow. or the next day :)
